INGREDIENTS

• 2 tbsp olive oil

• 1 large onion

• 3 garlic cloves, crushed

• a thumb-sized piece of ginger, peeled and grated

• ½ tsp ground cinnamon

• pinch of saffron

• 4 chicken breasts on the bone

• 750ml chicken stock

• juice of 1 lemon

• a handful of coriander

• a handful of parsley

• 1 tsp coriander seeds

• 1 preserved lemon

• 115g green olives

• 1 tbsp honey

• salt and freshly ground black pepper

METHOD

Heat the olive oil in a casserole dish, chop the onion finely and sauté for five minutes or until translucent. Add the garlic to the pan with the ginger, cinnamon and saffron for a further minute.

Add the chicken breasts and cook until browned, turning them frequently. Finely chop the parsley and most of the coriander, reserving some leaves to garnish. Pour in the stock, lemon juice, herbs and coriander seeds and bring to the boil, then simmer for 45 minutes.

Rinse the preserved lemon in cold water, discard the flesh, and chop the peel. Stir into the pan with the olives and honey and simmer for 15 minutes.

Remove the chicken and keep it warm while you continue to heat the sauce until reduced. Pour the sauce over the chicken, season, and garnish with coriander and lemon slices.
